I know I’ve told you about my addiction to Pinterest before. Well today, we’re going to talk about my older sister’s unhealthy obsession with Pinterest. Okay, not really, but I think it’s safe to say that Pinterest comes up in conversation nearly every time we see each other. Did you see my pin? Did you try that recipe? Did you see that I repinned the pin you repinned from so and so? It goes on and on. We’re enthralling, I know. BUT with this unhealthy obsession, we’ve definitely come across some healthy (and hellish) treats to share with each other.
When I first heard about this craze/saw her pinning anything and everything to her facebook, I didn’t quite buy it. Isn’t this just a giant waste of time? Looking through pages and pages of crafts, home decor and clothing? Yawn. Then one day when visiting my sister, she pulled out a delicious ‘energy bite’ as she called it. I, never being one to say no to a baked good, popped a small scrumptious peanut buttery oat ball right into my mouth. It was so simple, yet delicious! ‘So easy and from Pinterest!’ she told me. Wait. Come again? Pinterest has recipes?! And they can combine 3 ingredients and be that delicious? From that moment on, I was hooked. I spent hours on the site, loving every recipe I came across. Heck, I have a plethora of recipes now, so many I know I’ll never run out of fun new things to try. Today’s recipe (frozen peanut butter chocolate banana bites) was one I remember talking about with my sister. We both gave it a go (a little differently) and they BOTH turned out amazing. Not that the variation was much different, but hers turned out a little healthier ;). I should probably take note. Either route you go, the recipe is simple and delicious!
Bananas (how ever many you want 🙂 !)
Natural Peanut Butter
Milk Chocolate Chips
Start by simply cutting up the bananas into 1 inch slices.Line cookie sheets with parchment paper and set aside.
In a microwave safe bowl, melt the chocolate and peanut butter together in 30 second incriments; stirring between. I choose to use about half of the chocolate and 3/4 cup peanut butter. (I started with 1/2 cup and added a tad more to taste).
Mix in about 1/2 cup of the shredded coconut (if you like, it’s okay to leave it out too)! Dip the bananas in the chocolate and lay them on the parchment paper to dry.
Once you fill up the cookie sheets, place the banana in the freezer for at least 30 minutes! The longer you leave them in, the better. But once they are frozen, ENJOY! The banana can almost be mistaken with a creamy ice cream! And the peanut butter, chocolate, coconut combo is phenom!
My sister only drizzled the bananas with the melted peanut butter/chocolate, but that made them only 16 calories per bite! Seems legit if you ask me!
I know what you’re thinking… this is so easy anyone can do it. Well it is and you can, so I hope you do! The combination is simply delicious. You have no excuses, go make them.
